The Hurakan HKN-BCF10M blast chiller cabinet is designed for fast cooling and freezing of cooked dishes and semi-finished products in production kitchens of educational and healthcare canteens, as well as foodservice businesses with a high output per batch.
The chamber holds 10 GN 1/1 pans or 600×400 mm trays with 60 mm spacing between guide rails, taking in a full production batch without splitting it across several loads — for bakeries using 600×400 mm trays, this covers a full proofing cabinet rollout without moving product between machines. The chilling cycle brings food from +70°C down to +3°C — 25 kg in 90 minutes, while the freezing cycle takes it from +70°C to -18°C — 20 kg in 240 minutes. The cycles are managed by a Secop SC21CL compressor and a Dixell XB590L controller with a temperature probe: the cycle ends based on the actual temperature inside the product, not on a timer. The unit features automatic defrost and runs on R290 refrigerant.
