Rational iVario 2-XS Multifunctional Tilting Pan, 2x17 L capacity

The Rational iVario 2-XS multifunctional tilting pan is a compact unit for boiling, frying, stewing, deep-frying and other heat-processing methods in the kitchens of schools, kindergartens and hospitals. Its small footprint allows the unit to be placed almost anywhere in a kitchen.

The working area is split into two independently controlled pans of 17 L each, for a total capacity of 2x17 L. It is an electric unit rated at 14 kW at 400 V, with a weight of 132 kg. The pan bottom is damage-resistant, allowing food to be cooked without burning.

• The intelligent iCookingSuite technology offers 6 modes for different food types and 5 cooking methods across a 30-250 °C temperature range.
• Automatic parameter adjustment for each dish, with cooking started by pressing a single button and no need for constant staff supervision.
• The iZoneControl system lets the pan bottom be divided into four zones of any shape and size for cooking different dishes simultaneously at different temperatures; the pan surface area is 13 dm².
• Doneness is checked either by an internal temperature sensor or by cooking time.
• An intelligent heating system with ceramic heating elements ensures even heat distribution.
• Control is via a 10.1-inch color touch TFT display with intuitive icons; about 1200 cooking programs with 12 steps each are available.
• A rotary knob with a Push function allows quick entry of cooking parameters.
• Temperature is monitored by two probes, each with 6 measuring points, mounted on a magnetic holder; a digital temperature indicator and timer are included.
• A service diagnostic system (SDS) issues automatic messages, with remote control and HACCP data retrieval available.
• The unit's interior and exterior surfaces are made of stainless steel.
