The Apach APKE-77 electric boiling pan from the 700 series is equipment from the Italian manufacturer Apach, designed for cooking soups, sauces, porridges and semi-finished products in large volumes. Boiling pans like this are installed in school, kindergarten and hospital kitchens, as well as in foodservice businesses that prepare hot meals for large numbers of people every day.
The pan has a working capacity of 50 L, enough to prepare a single dish for an entire institution in one batch. The cooking tank is made of AISI 304 stainless steel with an AISI 316 bottom, providing corrosion resistance that meets sanitary requirements for kitchen equipment. Heating is indirect, transferred through a jacket filled with heat-transfer fluid rather than directly through the tank bottom, which reduces the risk of scorching and allows more precise control of the cooking process. Temperature is thermostatically controlled, while a pressure gauge and a safety valve monitor pressure in the heating system for safe operation. The pan is fitted with a discharge tap for quick emptying after cooking and a water filling tap, and a balanced lid with a side handle makes it easy to open and close during use.
