The Unox XLT193 prover cabinet is built for controlled proofing of yeast dough and holding semi-finished products before baking in school, kindergarten and hospital kitchens that bake their own bread and pastry. The unit pairs with Unox convection ovens to complete the full baking workflow, from proofing through to baking.
The cabinet holds 8 trays 600×400 mm with 68 mm spacing between guide rails, letting kitchen staff prove several batches of dough at different stages at the same time. Control is manual and built into the cabinet body; the maximum heating temperature is 50°C, which is enough for steady yeast dough proofing without drying out the surface.
