The Orest РТ-10 proofing cabinet is designed for controlled dough proofing before baking in the bakeries and pastry sections of school, kindergarten and hospital kitchens that produce their own bread and baked goods.
The body is made of stainless steel, and the tempered heat-resistant glass door, 6 mm thick, lets staff monitor the proofing process without opening the chamber. The universal rails accept 600×400 mm pastry trays or GN 1/1 gastronorm pans, with 85 mm between levels and 10 loading levels in total. Moisture generated during operation drains into a pull-out tray.
