Orest РТ-10 Proofing Cabinet, 600×400 mm Trays

The glass door of the Orest РТ-10 proofing cabinet lets cooks and pastry chefs at school, kindergarten and hospital kitchens check on the dough without opening the chamber and losing heat or humidity inside. That matters most where baked goods are produced in large batches on a tight meal-service schedule.

The chamber is made of stainless steel and holds 600×400 mm trays or GN 1/1 gastronorm pans across 10 levels spaced 85 mm apart — a format compatible with trays used in most bakery and pastry ovens found in central kitchens. Moisture generated during proofing collects in a pull-out tray, and temperature is controlled electromechanically within 30...90°C.
