Orest RT-12 Proofing Cabinet, 2×6 Tray Capacity

The Orest RT-12 proofing cabinet controls dough fermentation before baking in the kitchens of schools, kindergartens and hospitals that prepare bread and pastry items on site. It maintains the humidity and temperature needed for even dough rise before loading into the oven.

The cabinet body is made entirely of stainless steel, and the doors feature 6 mm heat-resistant glass for visual process control without opening. Universal rails spaced 85 mm apart fit both 600×400 mm pastry trays and GN 1/1 gastronorm pans, while a removable tray collects excess moisture. Control is electromechanical, with the working temperature adjustable from 30 to 90°C.
