The Orest РТ НОВ-4 proofing cabinet is used for pre-proofing dough before baking in the kitchens of schools, kindergartens, hospitals and other facilities running their own bakery production. The manufacturer lists this model together with the Orest PT HOB range of hearth bread ovens, so the cabinet is best viewed as part of a single baking line covering bread, buns and pastries right at the institution's kitchen.
A proofing cabinet keeps dough under stable temperature and humidity inside a closed chamber before it goes into the oven. That removes the need for kitchen staff to monitor proofing manually and keeps baking results consistent regardless of the ambient conditions in the kitchen itself.
