The Martellato 20-3D1003 Egg chocolate mould is a three-part magnetic mould from the Italian manufacturer for making egg-shaped chocolate pralines. It is used in pastry sections of cafes, restaurants and bakeries, as well as in kitchens of institutions that prepare their own chocolate confectionery.
The mould is made of polycarbonate — a durable, transparent material for repeated chocolate moulding. The construction consists of a magnetic base, a magnetic lid and a perforated smoothing plate that hold the piece in place while it is filled and set. The mould is compatible with automatic dosing (depositor) machines.
