The Martellato MA1025 chocolate mould is designed for making modern rectangular pralines in pastry workshops, cafes and restaurants, as well as in kitchens of schools, kindergartens and hospitals preparing their own confectionery.
The mould is made of transparent polycarbonate — a durable food-grade plastic suitable for repeated use and allowing visual control of each cavity while filling. Mould size is 275×175×26 mm, with 30 cavities for producing a batch of pralines measuring 33×22×20 mm (Ø×H) each, with an approximate finished weight of 15 g. A BPA-free version is also available from the manufacturer under code 21MA1025.
