The Silikomart COFFEE MAT is a silicone decorating sheet from the Italian brand Silikomart, designed to imprint a relief "coffee bean" pattern onto chocolate work, creams, sugar paste and other pastry compounds. The sheet is made of 100% platinum food-grade silicone and is rated for a wide temperature range from -60 °C to +230 °C, so it can be used both in the oven and for rapid cooling in a blast chiller.
The sheet measures 600×400 mm with an 8 mm thickness, matching standard baking trays of the same or a smaller size. Its outer border pairs well with rectangular metal frames, making it easier to shape clean rectangular decorative elements for cakes, pastries and other desserts prepared in an institutional kitchen.
