When a large batch of soup or fruit compote is being cooked at once for an entire school or hospital, ease of handling foam and small particles directly affects how quickly staff can turn the pot over. The wider the working head, the fewer motions a cook needs to make. The Lacor 60415 wire mesh skimmer has one of the largest diameters in the line — 16 cm — making it well suited to the larger cookware used in institutional kitchens.
The working head is a mesh made of metal wire, as reflected in the manufacturer's product name "espumadera de alambre". This construction lets liquid pass through freely while catching small particles and scale while cooking broths, compotes and grains. The overall tool length is 52 cm, allowing work with tall pots without leaning over steam. The manufacturer, Spain's Lacor, supplies professional kitchenware for foodservice, education and healthcare establishments.
