The casserole is made of 18/10 stainless steel with a 1.0 mm metal thickness — a gauge that carries the weight of a large volume of liquid and keeps the base from flexing. The thermo-diffusion bottom, with an aluminium disc between layers of stainless steel, heats evenly across this wide surface, which matters when cooking large batches of soup or broth.
