The ARCOS Riviera Fillet Knife 233000 is a Spanish-made tool for filleting meat and fish in institutional kitchens — schools, kindergartens, hospitals, cafés and restaurants. Light and easy to handle, it lets you work through filleting tasks quickly and comfortably.
The 200 mm blade is forged from a single piece of NITRUM® stainless steel, Arcos' proprietary material resistant to corrosion and moisture. The polyoxymethylene (POM) handle is fixed to the blade with stainless steel rivets and features an antibacterial system that inhibits the growth of bacteria and fungi.
