The Yaxell Ran 36011 ham slicer has a 230 mm blade — the longest in the lineup presented here — designed to slice large cuts of ham, cured meats and cooked meat in the volumes typical of an institutional kitchen. The blade length lets staff cut the product in a single stroke, keeping slice thickness consistent for accurate portioning.
The knife is made from 69 layers of stainless steel with a VG10 core (61 HRC) and a Damascus pattern on the blade surface. The handle is black Canvas-Micarta, a linen and synthetic resin composite, secured with two stainless steel rivets.
