ARCOS Colour Pro Sole Knife 243100

The ARCOS Colour Pro Sole Knife 243100 is a dedicated tool from the Spanish brand ARCOS for filleting flatfish in institutional kitchens: school, kindergarten and hospital catering units, fish-prep stations in cafés and restaurants. The long, flexible blade follows the shape of the fish, allowing the fillet to be separated cleanly from the bone.

The blade is made of NITRUM® stainless steel using a specially formulated casting technology, so it resists deformation under load and stays sharp longer. The grey-and-black elastomer-coated polypropylene handle gives a comfortable, secure grip and withstands high temperatures.
