The ARCOS Universal Flexible Sole Knife 284204 is a specialised tool for cleaning, dressing and filleting sole and other fish in institutional kitchens — school, kindergarten and hospital catering, as well as restaurants and cafés. The flexible blade lets you separate the fillet from the bone quickly and cleanly, without damaging the flesh.
The blade is made of NITRUM® stainless steel, a tough, long-lasting material that holds its edge under daily use. The polyoxymethylene (POM) handle features the Bactiproof Silver system, which keeps bacteria from adhering to its surface.
