The Yaxell Sayaka S-7 slicing knife has a narrow, long 180 mm blade designed for cutting cooked meat, fish, vegetables and other food into even, thin slices in school, kindergarten and hospital kitchens. The narrow blade reduces drag during cutting and helps produce neat portions when preparing meals in bulk.
The blade is made of Damascus steel — a three-layer construction around a VG10 steel core hardened to 61 on the Rockwell scale. The 15° sharpening angle gives a fine cutting edge, while the one-piece gray stainless steel handle, free of wood or plastic parts, withstands intensive daily use and is easy to wash.
