The Yaxell Super Gou Ypsilon 37201 santoku knife is a sleek all-black take on this popular Japanese blade shape, part of the Super Gou Ypsilon line — an evolution of Yaxell's (Japan) flagship Super Gou series. The universal santoku shape works well for high-volume cutting of vegetables, meat and fish, a routine task for chefs in school, kindergarten and hospital kitchens, as well as foodservice businesses.
The 165 mm (6.5'') blade is forged from 193 layers of stainless steel — more than the base Super Gou series — for even greater hardness and sharpness. The core is made of SG2 powdered steel hardened to 63 Rockwell — kitchen knives typically range from 54 to 64 Rockwell. The blade features a hand engraving of the product name in Japanese symbols on multilayered steel. The handle is made of premium black Canvas-Micarta, a durable, lightweight composite of linen and synthetic resin that outlasts wood. A wooden sheath is included for storage and transport.
