The 200 mm blade handles the everyday tasks of a chef's knife — chopping, slicing and breaking down ingredients in bulk, exactly what institutional kitchens in schools and hospitals require. The blade carries the Ran series' Damascus steel pattern, and the handle is black Canvas-Micarta fastened with two stainless steel rivets.
