The Yaxell Super Gou Ypsilon 37200 chef's knife is a universal working tool for cutting meat, fish, vegetables and herbs — the single most-used blade in any professional kitchen. The 200 mm (8'') blade is forged from 193 layers of stainless steel, giving it exceptional hardness and sharpness. The core is made of SG2 powdered steel hardened to 63 Rockwell — kitchen knives typically range from 54 to 64 Rockwell. The blade carries a hand engraving of the product name in Japanese symbols on multilayered steel. The handle is made of premium black Canvas-Micarta, a durable, lightweight composite of linen and synthetic resin that outlasts wood. Every knife in the Super Gou Ypsilon line comes with a wooden sheath for storage and transport.
