The ARCOS Riviera Blanc Boning Knife 231524 is a forged knife from the Spanish brand ARCOS for separating meat from bone and processing poultry in institutional kitchens: school, kindergarten and hospital canteens, as well as cafés and restaurants. The curved, thin blade allows precise, careful work on whole carcasses.
The 130 mm blade is forged from NITRUM stainless steel — a solid construction with no weak joints. The white polyoxymethylene (POM) handle features the Bactiproof Silver antibacterial system and adapts to the shape of the hand. The knife is dishwasher-safe, though the manufacturer recommends hand washing with a soft sponge to extend its service life.
