The 165 mm (6.5'') blade is forged from 161 layers of stainless steel, giving the knife exceptional hardness and sharpness. The core is made of SG2 powdered steel hardened to 63 Rockwell — kitchen knives typically range from 54 to 64 Rockwell. The blade carries a hand engraving of the product name in Japanese symbols on multilayered steel. The handle, made of premium red-and-black Canvas-Micarta — a durable, lightweight linen-and-resin composite that outlasts wood — is secured with three stainless steel rivets.
