The Yaxell Super Gou 37112 santoku knife is a compact version of the popular Japanese blade shape, well suited to precise tasks such as peeling, chopping small vegetables and herbs, and portioning. The 125 mm (5'') blade is forged from 161 layers of stainless steel, giving it exceptional hardness and sharpness despite its compact size. The core is made of SG2 powdered steel hardened to 63 Rockwell — kitchen knives typically range from 54 to 64 Rockwell. The blade carries a hand engraving of the product name in Japanese symbols on multilayered steel. The handle, made of premium red-and-black Canvas-Micarta — a durable, lightweight linen-and-resin composite — is secured with three stainless steel rivets. A wooden sheath is included.
