The ARCOS Universal Pro Fishmonger Knife 287000 is a professional knife from the Spanish brand ARCOS designed for cutting large fish in institutional kitchens: school, kindergarten and hospital canteens, fish-processing areas, cafés and restaurants. The wide triangular blade confidently handles dense tissue and bone during filleting.
The blade is made of NITRUM® stainless steel — Arcos' proprietary material valued for its strength and wear resistance — with a 2 mm thickness that provides the rigidity needed for large fish. The polyoxymethylene (POM) handle is joined to the blade with stainless-steel rivets; its straight lines improve grip comfort, and the shape adapts to the hand during extended use.
