The BRILLIS 111704 is a perforated aluminium baguette tray for baking French rolls and small loaves, designed for rotary ovens and bakery cabinets. Five channels with a half-round profile give the dough a classic baguette shape.
Perforation releases moisture during baking, letting warm air reach the dough, which activates the yeast and creates a light, porous crumb. The tray has no non-stick coating, and the channels run parallel to the long side of the sheet.
