The School Canteen Serving Line
In a school all meals are squeezed into short breaks, so serving is a question of throughput rather than of a counter.
- At least 200 cm from dining tables to the serving line, 100 cm between table rows, 40 cm to the wall.
- Washbasins in the dining hall are provided at one per 40 seats.
- Under the hub-kitchen model the operator is also responsible for maintaining catering-unit equipment.
- Alternative rooms used during martial law call for mobile solutions: trolleys and thermal containers.
